MEXICO AND THEIR QUESADILLAS

Mexican Culture and Cuisine
Mexican cuisine is all about using fresh ingredients and having loads of flavour. They often uses spices to create more flavour.

Tacos are a wheat or corn torilla around delicious fresh ingredients and rolled together.

Nachos are corn chips topped tradionally with salsa, guacomole and sour cream.

Quesadillas are wheat or corn tortillas filled tradionally with cheese and freshesh vegetables.
Mexican quesadillas
Serve Two
Ingredients
½ an avocado, peeled and chopped
1 tsp lemon juice
1 x 125g kidney beans
¼ cup salsa
¼ cup grated cheese
Mini tortillas
1 cup SR flour
1 cup greek yoghurt
Method
Preheat oven to 200c. Line a large baking tray with baking paper.
In a large bowl combine flour and yoghurt. using hands, turn the mixture onto a lightly floured bench and knead out. Break into 4 sections.
Roll each section out until thin. Leave to sit.
Lightly spray a small fry pan with oil.
Fry the tortilla until browned on both sides. Remove and repeat. Leave to sit.
Mash together avocado and lemon in a bowl until smooth. Season with salt and pepper.
Spread the mash onto two tortillas. Top with beans, salsa, cheese and cover with the two spare tortillas.
Place the tortillas in the oven until cheese melts. Remove and slice into quarters.
